Generally, a soul looks like a small shape of glowing light, and hovers above the person's chest when called out. It's easier to do it to someone willing, but they don't actually have to be. Just manifesting someone's soul doesn't hurt or harm them at all- but it can be attacked directly while it's outside of a body, so most people don't like to risk making themselves vulnerable like that unless there's a good reason for it.
